DATTEBAYO is a popular ramen restaurant located in the Akasaka district of Tokyo.

It's owned and run by Sayo Yamanaka.


It is a simple restaurant with a long counter that wraps around, and sits 15 people at a time. Sayo works with her partner, Ren Yoshiyasu, behind the counter as they take orders, prepare the specific toppings, and dish out the delectable ramen.

Menu

  • Shio Ramen- A salt-based broth with thin, straight, noodles, and topped with narutomaki, negi, menma, and nori.
  • Hearty Tonkotsu Ramen- A thick, savory broth, made from pork bones, pork fat, collagen, and a hint of chicken broth, long, thin, noodles, topped with a seasoned, half-boiled egg, corn, nori, and slabs of chashyu (braised pork) and a few kakuni (braised pork cubes).
  • Shoyu Ramen- A Soy sauce based broth mixed with vegetable broth, thick noodles, topped with menma, ao nori, kamaboko, and negi. Vegetarian
  • Miso Ramen- A thick, miso paste-based broth mixed with dashi fish stock and a hint of tonkotsu broth, curly noodles, and topped with spicy bean paste, sprouts, sesame seeds, chopped garlic.
  • Ren Style- A House Speciality Ramen consisting of a soy sauce based chicken broth with a hint of dashi, slightly thin, curly, noodles, and topped with chopped scallion, menma, sliced pork, kamaboko, egg, nori, and spinach.
  • Sayo Style- A House Speciality Ramen consisting of a broth made with shiro miso, chicken and pork bones, ginger, seaweed kelp, and garlic, thick and wavy noodles, and topped with fried tofu, bean sprouts, cabbage, menma, and miso-simmered ground pork.
